The short rib grilled cheese...This may be the most important sandwich of my life. Created by my brother, Dave, the uniqueness of this sandwich stopped people in their tracks (along with generous samples of Brussels sprouts, also my brother's creation) and helped attract people to the cart…they talked about it, it pulled people in. Because of this sandwich, and the rest of that menu and the loyalty we formed because of it, it allowed me to have confidence that I could build something cool that people liked and inspired this journey in food I’ve been on for about 10 years now. This is the best sandwich I have ever had in my lift. It is so decadent and just feels so good to eat. It give you all the feels. We dont live in a city that always has watercress fresh ( not expired ) available so we substituted arugula and we did not add the onions. I cant wait to make the short ribs this week for my brother and his family and have left overs to make this grilled cheese again. I am looking forward to trying this on my brothers homemade sour dough bread! mmm!
This has become our traditional New Year's Eve meal. Big props to your brother for thinking of this wacky combination.
For those of you asking for a written recipe, I wrote it all out for myself, so I figure I will share that here.
SHORT RIB GRILLED CHEESE
Ingredients
-Leftover Braised Short Ribs
-Sourdough Bread
-Blackberry Jam
-Watercress
-Gruyere
-Pickled Red Onions
-Mayo
Instructions
-Add a little water to the leftover short ribs, then reheat them.
-Assemble the sandwich over a sheet tray to catch any bits that fall off the bread.
A thin layer of blackberry jam on one slice of the bread.
Plenty of Gruyere cheese on both sides of the bread.
